First off the head gaskets can leak a bit of water OUTSIDE the engine, see it now and again (have a Disco in now, but its using water). What happens is the water jacket is neat to the front cylinders... thus that cyl pressurizes the water jacket... which will result in water loss and radiator damage (buckles it!)... thats worse case.
But the Change the valves? And they've already been changed at 20K? Someone taking you for a ride on your nickle! Some shops...
We change H/Gaskets on cars with 120,000 and even 150,000 and may do a valve job, but if highly maintained we've found in some rare cases we don't ahve to change them... just face them!
If you're NOT using water drive it for a bit... If shop really good he could change gaskets with little effort (replace head bolts though... they will break!).
I did like the one of "Blown Intake gasket"... never heard that one. Its normally called LOSE BOLTS, which re-torquing will cure.
