Thinking about Old Man EMU Springs?

I have a 2001 Disco II that I just bought and I am thinking about upgrading the suspension. I would like a little less give in the turns, a little stiffer back-end support when I tow, and I do some off-roading as well. There are three grades of springs to choose from- soft, med, hard. I was thinking medium grade would probably be the way to go and was told to change to a Bilstein shock. I don't mind a little harder ride but I don't want to be counting pebbles on the road etiher. I am looking to hear from those who have done this type of upgrade. Any feedback would be greatly appreciated. Secondly, I would like to try and install them myself. I have "wrenched" on vehicles before but never on suspension. I am assuming I need a spring compressor to do this job correctly and need to find a step step outline how to go about doing this procedure. Again, I am looking for advise on all the above.
