It would be an easy job to convert back to a 2.25 petrol. All you do is remove the conversion ring that fits between the v8 and the bell housing and the engine goes straight back in and bolts to the bell housing. However unless you're going to convert back to a diesel I don't think you'll find much difference in fuel consumption between the v8 and the 2.25 petrol as long as you are lightfooted with the v8. The 2.25 is basically a large lump of cast iron which weighs about twice as much as the aluminium v8. I did the conversion to v8 with my lightweight and the consumption is about the same, but I don't do any heavy-footed off-roading.
