First -- what model, which V-8 engine, what radiator? Was it a factory engine installation?
1) The thermostat could be your problem. It's under the thermostat housing which is the small (about the size of the palm of your hand) at the centre front of the engine. It has a domed top and a stub sticking out of it which a rubber hose is fastened to. It's secured by two nuts on studs. Simply remove the nuts and lift the housing. To test, lift out the thermostat and replace the housing. Drive the vehicle. Did that solve the problem? (No, I thought not ...)
2) These engines and cooling systems are sensitive to coolant/ antifreeze solution. Have you been very disciplined about changing it (every year for cheap fluid, every two years for quality fluid)? If not, your radiator is probably clogged, which is beyond what we're talking about here - see a radiator shop.
3) Any oil or bubbled in the coolant? How about the smell of "burnt curry" in the exhaust? If so to either, you have a gasket leak, probably head gasket.
