Have someone push the acelerator pedal to the floor and check and see if the carby throttleplate (butterfly) is opening fully.

Don't use the linkage under the bonnet, use the acelerator pedal in the cabin. I've seen cases where there is wear in the linkage or mats on the floor and when you check it using the linkage under the bonnet it looks fine. But when you use the accelerator pedal in the cabin, the carby is only opening 3/4.
